Nkwobi

Hello my lovelies! I know I have been away for a while but I have been busy sorting giveaways for you all. So make sure you stay tuned through out December to be a lucky winner. Can you believe December is around the corner. Haaaaaaaaaa! 

Anyways today we are looking at Nkwobi. 

Nkwobi originates from the south – eastern part of Nigeria. It’s basically cow leg cooked until very tender, chopped and then mixed with spices that makes a unique sauce.
It is also the same as the sauce used in Isi ewu (Goat head) but I don’t think I can get myself to eat that. It is mostly eaten on its own as an appetizer or snack lol!
I call it a snack because on lovely Saturday afternoon, there were three football matches on, no goat meat for Asun but there was cow leg in different meat bags. So Nkwobi came to mind... So let’s do this.

Moin-Moin

Moin- Moin is a bean pudding made from blended black eyed beans and cooked through steaming. It originates from Nigeria and it can be eaten alone or with rice, plantain, bread or porridge.

So my friend was in the market and asked me what I wanted and all i could think of was leaves. Zobo leaves moin-moin leaves everything leaves lol!!! (A true friend is one who thinks about you first in the midst of food)
Ingredients
2 Cups of red beans
Palm oil
2 Tomatoes
1 scotch bonnet
1 onion
2 seasoning cubes
Mackerel (optional)
Egg (optional)

Kidney Beans, Yam and Gizzard Pottage

This is a comforting dish that hits all the right spot in your body. A popular dish in Nigeria is Yam and Beans but this right here is a twist that will become a winner in your home as a substitute to the traditional Yam and Beans. I have used kidney beans instead of the normal red beans.
Except from the fact that my kidney beans substitute is quick, it’s rich in Vitamin C which is necessary for the flu around, high in fibre and omega 3s.
I will be making this dish again and again until Spring.....  (Don’t judge me lol!!!)

Oven Baked Tilapia Fish

I feel like it's fish season for me right now. I just can’t get enough of it. Maybe my body is getting prepared for the amount of meat I will be feeding it during Christmas.
I will be posting different version of this fish once in a while as I have so many recipe for it. This is a mid week recipe where there is little to no time to prepare dinner but still taste amazing.
I have used the Tangerine Orange bell peppers as this is the sweetest out of all the bell peppers and has a great amount of Vitamin A and C.

I deleted the first few pictures by mistake (Arrrgghhh!!!) so accept my apologies. I am sure the instructions are pretty straightforward but if you need anymore clarification let me know. 

Ingredients
Tilapia Fish
Tangerine Orange Bell Peppers
Onions
2 scotch bonnet
Maggi
Vegetable Oil
Lemon Juice
Clean and rinse the fish including the head, fin, tail and scales. If the head scares you or puts you off, cut it off.
Put the clean fish in a bowl to let the water drain off.
Slice the peppers and onions.
Line the oven tray with foil, place the fish in and marinate it with oil.
Rub the Maggi on each fish both inside and outside then stuff the fish with the sliced peppers and onions.

Lebanese Style Chicken Shawarma

I love Shawarma. Whether it’s Chicken, Steak, Lamb or Turkey, I just love it. I have lost count of how many times I have gone Edgware road just for it. So I thought it’s high time I reduce my late night trips to Edgware road and find a solution to my cravings. Lol!!(I did tell you all I love food)
So after playing with so many spices and speaking with the Chef at the local Lebanese Restaurant I finally have my own recipe... Yayyyy!!!!! You all can’t fully understand but I am sure The Hubz is thrilled... So let’s go straight into it
Ingredients
400g Chicken Fillets
1 tsp grounded oregano
1 tsp ginger
1tsp cumin
1tsp paprika
½ grounded nutmeg
1tsp garlic granules
1tsp tomato puree
1tbsp extra virgin olive oil
2 tbsp Tahini paste
2 tbsp greek yogurt
1tsp of lemon juice
Pinch of salt
Pitta Bread
Lettuce/ Cabbage/ Parsley
Cucumbers
Red & White Onions

Cut the chicken fillets in thin slices

Easy Fisherman Soup

I love Autumn as it allows me to be creative with different spices. I was waiting for a friend for a long time in the rain so when I got in I wanted something to keep me warm and also sweat off the cold feeling immediately. I also wanted it to be quick. Lol! (The rain was madness!!!! But that rainbow made up for it :-) ) Anyways, using the ingredients at home I decided to start cooking. I love the fact it’s so filling, healthy, refreshing and warming. It is also a source of Omega 3(wink wink). It’s one of those dishes you just want to eat while chilling in your onesie and watching Scandal at the same time.

Designer / Buka Stew

This is a type of stew cooked in Nigeria with palm oil tomatoes, bell peppers and chillies. The ingredients are the normal ingredients you use to cook normal Nigerian stew but the method used is slightly different.
Buka stew also reminds me of Aya-mashe but in red. lol!

Ingredients
Tomatoes
Red Bell Peppers
Onion
Scotch Bonnet
Palm Oil
Seasoning Cubes
Eggs
Assorted Meat (Beef, Shaki, Roundabout, Cow nose, Cow Leg, Smoked Turkey, Goat meat)

Cook your meat and fry
